Chocolate Chunk Whole Wheat Bread Pudding

The perfect sized serving for two - rich and sweet whole wheat bread pudding studded with dark chocolate chunks.
Ingredients
- 1 egg
- 1/2 cup unsweetened soy milk
- 2 tablespoons dark brown sugar
- 1 teaspoon pure vanilla extract
- 1 teaspoon cinnamon
- 1 dash ground nutmeg
- 1 pinch salt
- 2 medium slices whole wheat bread (cubed with crusts left on)
- 2 tablespoons chocolate chunks
Directions
Step 1

In a small bowl combine the egg, soymilk, vanilla extract, brown sugar, cinnamon, nutmeg and salt and whisk well. |
Step 2

Gently stir in the bread cubes and chocolate chips, then pour into an oven safe bowl. |
Step 3

Let the mixture sit for about 5 minutes so the bread absorbs the liquid. |
Step 4
|
Bake at 350 for 15-20 minutes, or until a knife inserted in the center comes out clean. |
