Chocolate Chunk Whole Wheat Bread Pudding

The perfect sized serving for two - rich and sweet whole wheat bread pudding studded with dark chocolate chunks.


  • 1 egg
  • 1/2 cup unsweetened soy milk
  • 2 tablespoons dark brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon cinnamon
  • 1 dash ground nutmeg
  • 1 pinch salt
  • 2 medium slices whole wheat bread (cubed with crusts left on)
  • 2 tablespoons chocolate chunks


Step 1
In a small bowl combine the egg, soymilk, vanilla extract, brown sugar, cinnamon, nutmeg and salt and whisk well.
Step 2
Gently stir in the bread cubes and chocolate chips, then pour into an oven safe bowl.
Step 3
Let the mixture sit for about 5 minutes so the bread absorbs the liquid.
Step 4
Bake at 350 for 15-20 minutes, or until a knife inserted in the center comes out clean.
