Vegan pancakes studded with bites of fresh peaches.
Ingredients
- 1/2 cup whole rolled oats
- 1/2 cup whole wheat flour
- 2 teaspoons baking soda
- 1 pinch salt
- 2 teaspoons cinnamon
- 1 + 1/3 cup unsweetened soy milk
- 1 peach (diced)
- 1 peach (sliced for garnish)
Directions

Combine all the dry ingredients in a large bowl and mix well. | |

Add the soy milk and mix well. (It will look watery but the oats will absorb the extra moisture) | |

Stir in the diced peaches. | |
Step 4 | |
While waiting for the batter to thicken, place the sliced peaches on a greased pan over medium-high heat to caramelize. Flip after 3 minutes. | |
Step 5 | |
After the pancake batter has thickened (about two minutes), set a greased frying pan over medium heat. | |
Step 6 | |
Plop a heaping tablespoon of the batter into the pan, flip when the tops look semi-dry and cook for another three minutes or until golden brown. |
