Peach Pie Pancakes

Vegan pancakes studded with bites of fresh peaches.

Ingredients

  • 1/2 cup whole rolled oats
  • 1/2 cup whole wheat flour
  • 2 teaspoons baking soda
  • 1 pinch salt
  • 2 teaspoons cinnamon
  • 1 + 1/3 cup unsweetened soy milk
  • 1 peach (diced)
  • 1 peach (sliced for garnish)

Directions

Step 1
Combine all the dry ingredients in a large bowl and mix well.
Step 2
Add the soy milk and mix well. (It will look watery but the oats will absorb the extra moisture)
Step 3
Stir in the diced peaches.
Step 4
While waiting for the batter to thicken, place the sliced peaches on a greased pan over medium-high heat to caramelize. Flip after 3 minutes.
Step 5
After the pancake batter has thickened (about two minutes), set a greased frying pan over medium heat.
Step 6
Plop a heaping tablespoon of the batter into the pan, flip when the tops look semi-dry and cook for another three minutes or until golden brown.
