A perfect blend of summer and autumn - peach and pumpkin pancakes.


  • 1/2 cup whole rolled oats
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup pumpkin puree
  • 1 peach (pitted and diced)
  • 1 + 1/2 cup unsweetened soy milk


Step 1
Mix the dry ingredients together, then add the wet.
Step 2
Stir until just combined.
Step 3
Pour 1 heaping tablespoon onto greased pan over medium heat.
Step 4
Cook until the top begins to look dry and the bubbles have popped. Flip.
Step 5
Cook on the other side for 4-5 minutes.
