Peach Pumpkin Pie Pancakes

A perfect blend of summer and autumn - peach and pumpkin pancakes.
Ingredients
- 1/2 cup whole rolled oats
- 1/2 cup whole wheat flour
- 1 teaspoon baking powder
- 1 pinch salt
- 1 teaspoon pumpkin pie spice
- 1/2 cup pumpkin puree
- 1 peach (pitted and diced)
- 1 + 1/2 cup unsweetened soy milk
Directions
Step 1

Mix the dry ingredients together, then add the wet. |
Step 2

Stir until just combined. |
Step 3
|
Pour 1 heaping tablespoon onto greased pan over medium heat. |
Step 4
|
Cook until the top begins to look dry and the bubbles have popped. Flip. |
Step 5
|
Cook on the other side for 4-5 minutes. |
