Chocolate Chip Banana Muffins

Adapted from my Great Grandma Max's recipe - sweet, fluffy muffins studded with a healthy dose of chocolate chips and chunks of banana.
Ingredients
- 1/3 cup butter (softened)
- 2/3 cups brown sugar (tightly packed)
- 2 eggs
- 1 + 1/2 cup white whole wheat flour
- 1/4 cup rolled oats
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1 overripe banana (mashed)
- 1 overripe banana (roughly chopped)
- A crapload of chocolate chips
Directions
Step 1 | |
In a large bowl, cream the butter and brown sugar together. | |

Add the eggs and whisk until smooth. | |
Step 3 | |
In a separate bowl, combine the flour, oats, baking powder, baking soda and salt and mix well. | |
Step 4 | |
Pour the dry ingredients into the wet and combine. | |
Step 5 | |
Stir in bananas and chocolate chips (I used almost half a bag in mine! Oops!) | |
Step 6 | |
Pour the batter into lined or greased muffin tins and bake at 350 degrees for 25 minutes, or until a toothpick inserted comes out clean. |
