Adapted from my Great Grandma Max's recipe - sweet, fluffy muffins studded with a healthy dose of chocolate chips and chunks of banana.

Ingredients

  • 1/3 cup butter (softened)
  • 2/3 cups brown sugar (tightly packed)
  • 2 eggs
  • 1 + 1/2 cup white whole wheat flour
  • 1/4 cup rolled oats
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1 overripe banana (mashed)
  • 1 overripe banana (roughly chopped)
  • A crapload of chocolate chips

Directions

Step 1
In a large bowl, cream the butter and brown sugar together.
Step 2
Add the eggs and whisk until smooth.
Step 3
In a separate bowl, combine the flour, oats, baking powder, baking soda and salt and mix well.
Step 4
Pour the dry ingredients into the wet and combine.
Step 5
Stir in bananas and chocolate chips (I used almost half a bag in mine! Oops!)
Step 6
Pour the batter into lined or greased muffin tins and bake at 350 degrees for 25 minutes, or until a toothpick inserted comes out clean.
