The perfect way to use up any leftover sweet potatoes.
Ingredients
- 1/3 cup whole rolled oats
- 1/3 cup whole wheat flour
- 1 + 1/2 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1 pinch salt
- 1 Small baked sweet potato (skinned and mashed)
- 2/3 - 1 + 1/3 cups unsweetened soy milk
- 1 teaspoon pure vanilla extract
Directions
Step 1

In a large bowl combine the oats, flour, baking soda, pumpkin pie spice and salt. |
Step 2

In another bowl combine the sweet potato, 2/3 cup of soy milk and vanilla extract. |
Step 3

Add the sweet potato mixture to the dry ingredients and mix well, adding the remaining soy milk until the consistency is thin enough to pour. |  |
Step 4
|
Pour a heaping tablespoon onto a greased pan and cook over medium-low heat until the edges look a little brown, then flip and cook for another three minutes. |
