Sweet spiced cookies that can be made vegan-friendly, just in time for Christmas.

Ingredients

  • 1 cup butter ((or vegan butter substitute))
  • 1 cup loosely packed brown sugar
  • 1/4 cup blackstrap molasses
  • 1/4 cup agave nectar
  • 2 teaspoons cinnamon
  • 1 teaspoon ground cloves
  • 1/2 teaspoon baking soda (mixed with 1 tsp water)
  • 3-4 cups white whole wheat flour (as needed)

Directions

Step 1
Cream butter (or vegan butter substitute) with brown sugar, molasses and agave nectar.
Step 2
Stir in cinnamon, cloves and baking soda mixture.
Step 3
Add flour a little at a time, mixing well until a stiff dough forms.
Step 4
Roll dough into a log, wrap in wax paper and refrigerate for at least an hour.
Step 5
Remove from refrigerator, slice and bake at 400 degrees for 8-10 minutes, or until lightly brown.
