When the temperatures plummet and all you need is a big slice of heavenly carbohydrate, look to this sweet and hearty cake-bread studded with spicy cinnamon chips.

Ingredients

  • 1 + 3/4 cup flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1/2 cup cinnamon chips
  • 1/2 cup unsalted butter (softened)
  • 2/3 cups brown sugar (tightly packed)
  • 2 eggs
  • 1 cup pumpkin puree

Directions

Step 1
In a large bowl, cream the butter and sugar. Add the eggs and pumpkin puree and whisk until smooth.
Step 2
In a separate bowl, sift together the flour, baking powder, baking soda, salt, pumpkin pie spice.
Step 3
Pour the dry ingredients into the wet and stir.
Step 4
Add the cinnamon chips and mix until combined.
Step 5
Pour the batter into a greased 9x5 in. bread pan and bake at 350 degrees Fahrenheit for 45-55 minutes, or until inserted knife comes out clean.
