Breaking the Chain: White Elephant

I’m starting a new blog series called Breaking the Chain. There are so many chain restaurants out there in the world that you can eat at anytime, and anywhere. I’m breaking the chain and focusing on local eateries and how they stand apart.

Local doesn’t mean only around my area – it means small establishments that are giving it a go on their own, and producing quality food that rivals, and more than often, beats the taste of large chains that manufacture their foods without giving it a second thought. This will include mom and pop places in Arizona, California, Washington and other places I travel to.

My first break: White Elephant.
I discovered this lovely little Thai restaurant about two years ago when I was taking classes down the street. The owner, Nok, is a sweet woman who goes above and beyond to ensure that her guests are served the best tasting, freshest food possible.
Case in point: I ordered a Thai iced tea and asked if they had any soymilk to substitute for the evaporated milk (dairy-free Lent!). They were out of soy, but our waiter ended up running over to the local Whole Foods and bringing back soymilk so I could enjoy Thai tea! I was in shock! Seriously, AMAZING customer service!
My roommate and I ordered the Tom Kha Gai – a coconut milk-based soup with chicken, mushrooms, lemongrass and galangal root. They lit the hot pot as it got to our table which kept the tangy, savory soup warm while we slowly sipped it.
We also split the pineapple fried rice. We requested that it be made with brown rice, and cooked with as little oil as possible. Instead of grumbling over our substitutions and requests, they brought out the most beautifully presented dish I’ve ever seen. The nutty brown rice was encased in half of a pineapple shell, and studded with tender peas and carrots, juicy raisins and chunks of pineapple, succulent shrimp that were perfectly cooked, and crunchy cashews.

After our meal, we were STUFFED!
Or we thought we were… Then Nok sent out a complimentary dessert of sweet rice and mango! Over the years, she’s learned that this is our absolute favorite dessert, and was kind enough to top off our amazing meal with tender, ripe mango and sweet coconut-scented rice sprinkled with toasted sesame seeds.

Okay, NOW were were stuffed!

White Elephant is located at 668 N. Moorpark Road in Thousand Oaks, California. If you want a delicious meal that you know is made on site and not pulled from a freezer and reheated, check this place out – and tell Nok that Becki says hi! This is my absolute favorite Thai restaurant in the Pacific Coast time zone, and believe me, I’ve tried them all!

So Much To Do!

     How’s your Thanksgiving prep going? Mine hasn’t started yet. I’ve been pretty busy with some important, pressing things.

Thai food had to be consumed.
Drives through my neighborhood had to be taken.
The sky had to be gazed at.
Fair-trade beer had to be tasted.
It was good.

Nutcrackers had to be inspected.

It did not pass inspection.

Whole Wheat Cranberry-Walnut Bread had to be made. And consumed.
     I suppose I could claim the cranberry bread as a Thanksgiving dish, but I have so much more to make tomorrow! I think I’ll call it a warm-up training session for Turkey Day. I used Jenna’s recipe but left out the orange zest, used brown sugar instead of granulated, and pressed the batter into three mini-bread pans instead of one big pan.

You know it’s done when the cranberries on top have burst open in a joyous, tangy display of love.
I highly recommend this bread! Quick, easy and de-freakin-luscious!
     
     Have a wonderful Thanksgiving! Enjoy your days off, relax and appreciate the people you’re able to spend time with. I’ll be spending the day in the kitchen with the parentals, cooking, eating and feeling blessed.
And then I work at 3:45am on Black Friday.

Homemade-ish Thai Green Curry

     I had my last training session before my new job begins! I drove a gigantic van, learned a little about texturing and the process that the artist goes through to come up with her magnificent paintings and came home ready to FEAST.

Homemade-ish Thai Green Curry
1 can coconut milk (Don’t get the lame, watery light stuff, please)
1 tablespoon thai green curry paste
1 tbsp fish sauce (Ew, I know, but it makes the dish!)
2 bell peppers, red and yellow
1 russet potato
2 carrots
1/2 cup frozen corn
1/2 cup frozen peas
3 tbsp slivered almonds (optional)
Ingredients assembled! I even had the pliers out (check out the last picture) in preparation for opening the can of coconut milk.
     1. In a saucepan combine the coconut milk, green curry paste and fish sauce over medium heat.
The can opened! Maybe it’s just Trader Joe’s brand cans that have issues?
Pre-stir.
Blended!
     2. While the coconut milk is warming, peel and chop the potato and carrots and slice the bell peppers.
     3. Stir the vegetables into the sauce and bring to a boil, then reduce to a simmer.
Pretty colors!
     4. Cook for twenty minutes over low heat until thickened.
     5. If yours doesn’t thicken, as mine refused to, take 3 tablespoons of raw almond slivers (no skins), place them in a food processor and process into a fine paste – about 2 minutes.
     6. Add the almond paste to the curry and watch it magically come together!
Magic!
     7. Serve over a delicious, nutty brown rice and absorb! Try to remember to chew, not just inhale.
This makes about 6 servings. I have SO much leftover!
     This curry is delicious! I didn’t add any salt, which may have added a little extra flavor, but I loved it on its own. Everything I used in this recipe had 2 ingredients on the label or fewer! How’s that for real food?
     I got a last minute audition for tomorrey at noon fifteen! I’m off to study sides!
