Ingredients
- 1 cup white whole wheat flour
- 1/2 cup rolled oats
- 3/4 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1 teaspoon pumpkin pie spice
- 1/2 cup semi-sweet chocolate chips
- 3/4 cups brown sugar (tightly packed)
- 1/8 cup vegetable oil
- 1 cup pumpkin puree
- 1/4 cup water

Preheat oven to 400 degrees Fahrenheit and grease muffin tins. (Or use silicon muffin cups like I did – They’re pricey but make everything easier! I highly recommend them.) | |

Combine the first seven ingredients in a bowl and mix well. | |

In a second larger bowl, combine the remaining ingredients. | |
Step 4 | |
Add the wet ingredients into the dry ingredients and mix. | |

Pour batter into muffin tins and bake until done - Baking times vary: my mini-muffins took 12 minutes until they were done. The full size muffins took 25 minutes. |
