This is how I spend my weekdays.
It was a very, very difficult day. The sun was almost TOO warm!
Nothing like a good hike up a cliff to look out over the sea.

Like I said, it was a really, really difficult day.

I got home after running a few errands today and found another lovely box from Foodbuzz on my doorstep. Free stuff = happy! And spoiled!
Although I received these two bags of chips free from Tostitos, my opinions are my own, yada yada yada. You know the drill.
Lots of whole ingredients and mixes of grains – I do like that!
The roasted garlic and black bean was sadly pretty bland. There was absolutely no garlic flavor at all.
Let me first say that I’m not a huge fan of chipotle. These chips, however may have converted me! They taste very similar to Doritos, but given the option between the two, of course I’d take the chips with the whole grains and all natural ingredients!

The bag says “no dip needed”, but I’d still dunk these babies in a big vat of lovely green avocado, just because I can!

Shop Brew!

On Sunday I ventured to Woodland Hills for a day of beer brewing with the Maltose Falcons. Thanks to daylight savings time, I woke up late and barely had time to shove a piece of toast in my mouth before I had to leave.
Luckily, I arrived on time, we got our recipe and set to work gathering the ingredients. And yes, that DOES indeed say 36LBS of pale malt, 9lbs of Brown Malt and 6lbs of English Caramel. We were brewing 30 gallons of beer that day – serious stuff!
We got to work choosing our malts.
And weighed out the hops.
Then we got to work mashing the grains.
After letting the grains steep at 154 degrees for 60 minutes, we mashed out by running 168 degree water through the grain bed until it drained all the sugars, starches and proteins into another tun.
Once we’d filled the second tun, we brought the wort up to a boil…
And added the bittering hops.Then we had another 45 minutes to wait until the addition of the aroma hops, so we got to work feeding ourselves – the most important part.
Oops, that’s not the food I meant to show you…
There we go! Espresso shortbread cookies…
And of course my Oatmeal Stout Brownies with Caramelized Bacon. Those disappeared within half an hour!
Along with more beer. It’s the rule of brewing – “Relax, don’t worry. Have a homebrew.” And we sure did!
I also brought along a growler of Dos Beckis, which was quickly consumed!
After the final addition of the aroma hops, we quickly brought the temperature of the wort down with an immersion wort chiller that connects to a regular garden hose. The copper coil carries the cold water through the wort, rapidly bringing the temperature down.
We then filled all of the carboys or fermenters and oxygenated them before pitching in the yeast.
The cold break – the proteins have been chilled so quickly that they coagulate and then drop to the bottom of the carboy, resulting in  clearer beer.

My beer had a very active day yesterday, screaming away through the airlock in my closet, but it’s quieted down a lot already. Possibly TOO much. For now, I’m going to…

Oatmeal Stout Brownies with Caramelized Bacon

Oh my geez. On Saturday, I combined the three best things in the entire universe. I was preparing for the shop brew with the Maltose Falcons and wanted to bring something that would sustain the group for the day, be insanely delicious, and make them all love me. Chocolate + beer + bacon = LOVE!
Oatmeal Stout Brownies with Caramelized Bacon – Printable recipe available HERE.

Ingredients:
12 oz. oatmeal stout (I used Stockyard because that’s all Trader Joe’s had. I’d recommend something a little richer, like a double chocolate stout)
1 cup extra dark unsweetened cocoa powder
2 cups dark brown sugar, firmly packed
1/2 cup melted Earth Balance (I used butter since I was serving to ravenous men, but normally I’d use something dairy-free)
4 eggs
2 tsp vanilla extract
2 cups white whole wheat flour
3/4 tsp kosher salt
A crapload of chocolate chips
For the caramelized bacon:
6 strips of THINLY sliced bacon
1 heaping tbsp dark brown sugar, tightly packed

1. Tilt a large bowl and pour the stout slowly in. Mix together the oatmeal stout and the unsweetened cocoa powder.

2. Add the brown sugar, butter or butter substitute, eggs and vanilla extract and whisk, making sure all the yolks are broken.
3. Add the flour, salt and a handful (or four) of chocolate chips and stir just until blended.
4. Pour into a greased 9 1/2 x 9 1/2 inch baking pan.
5. Bake at 350 degrees for 35-40 minutes or until toothpick inserted in the center comes out relatively clean.
6. While the brownie is baking, place 6 strips of thin bacon (MUST be thin in order to get crispy!) in a cold skillet, then turn burner on to medium heat.
7. Cook over medium heat for about 8 minutes, turning every two minutes and draining off grease as it forms.
8. Lay cooked bacon on a plate covered with paper towels and let drain.
9. Take the slightly cooled bacon and chop into small pieces.
10. Add the bacon back into the pan (wipe the pan with a dry paper towel to remove as much grease as possible) along with a heaping tablespoon of brown sugar.
11. Turn heat to medium-high and stir constantly until the sugar melts and coats all the bacon (about three minutes).
12. Remove immediately and spread on a piece of parchment paper.
13. When the brownie is done cooking, sprinkle the caramelized bacon crumbles all over the top, then cover with foil and let rest for five minutes.

OH MY GEEZ, BACON!

I served this at the shop brew and it was DEMOLISHED by the hungry guys.

Lesson of the day: If you want to be adored, BAKE THIS NOW. It’s also perfect for St. Patrick’s Day – and would be even better topped with a scoop of Paciugo’s Guinness gelato and a scoop of organic maple caramelized bacon gelato. Oooooh myyyyy geeeeeez! I should’ve done that!!!

Ladyface with Bloggers!

Last night I met up with eleven other bloggers and one of my very favorite places in the world: Ladyface.
We got seated inside at one of the long tables, but after a few minutes of screaming at each other trying to be heard, we requested a swap for a table on the patio.
I ordered my favorite: Chesebro IPA. 9.8%ABV and soopah hoppy!
It made me soopah happy.
Kaitlin being a super-creeper and getting WAY better, clearer pictures than I got. I’m not jealous of her camera or skills at all…

We spent the entire night drinking delicious beer, consuming wonderful food, but most importantly, talking incessantly about beer, blogging, food, life in general, and having the most amazing, fun Friday night with new friends. I never would have thought that I would be spending a Friday night with some people that I met on the internet, and ENJOYING myself at that, but I’m hooked!
And then Amanda did the downward dog.
And our night was complete.

We’re all waiting for the group pictures to show up – I think Jessie and Kaitlin have those in their possession. I can’t think of a better way to spend my Friday than at Ladyface with good beer, good bloggers and great friends.

Paul Newman Was Here!

Two weeks ago, I arrived home to a gigantic box sitting on my doorstep. Naturally I assumed it was for my roommate, since he gets all of his business equipment delivered in the same manner on a daily basis. Then I saw MY NAME!

I opened it in a true foodie manner.
I began pulling out jars of Newman’s Own marinara and bottles of Newman’s Own salad dressing.
Then I realized, “Wait, if Newman’s Own is sending me this, then that means…”
YES!!! (Oh wait, you still don’t understand, do you?)
I received three jars of Newman’s Own marinara, three bottles of Newman’s Own salad dressing, two coupons for Newman’s Own pizza and… A FLIP HD CAM!!!
I wasn’t excited at all.
Pardon the nose stud – it’s not real, I had an audition that day.

I submit a recipe idea for a contest sponsored by Foodbuzz and Newman’s Own, and was lucky enough to be chosen to receive all this amazing free stuff, and FILM the recipe! And so, without further ado, I present to you my video recipe: Macadamia and Coconut Encrusted Mahi Mahi with White Wine and Pineapple-infused Balsamic Reduction featuring Newman’s Own Chardonnay.

Or, since that’s a ridiculously long name, Tropical Fishsticks!

Welcome to Bites ‘n Brews!

Sorry guys, I got impatient. Right after I’d asked for help, I decided I just wanted to give it a go and start my own website. I’m still playing around with templates and need a custom header and need to figure out EVERYTHING else (including how to change the font and spacing).

I did promise you a recipe though, and THAT I can figure out myself, even with this crazy new format.

SOUR CREAM CHICKEN ENCHILADAS
Ingredients:

3/4 -1lb boneless chicken breast
1 boullion cube
2 tbsp olive oil
1/2 onion, chopped
1/2 cup mushrooms, roughly chopped
4 oz diced green chiles
16 oz sour cream
2 tsp chili powder
1/2 tsp salt
1/2 tsp garlic powder
7-8 raw tortillas
a boatload of cheddar cheese

1. In a large pot, boil chicken breast with 4-6 quarts of water and a boullion cube until cooked through.
2. While the chicken cooks, heat the olive in another large pot, then add onions and mushrooms and saute until onions are softened and translucent (about 6 minutes).
3. Once the chicken is cooked through, drain and shred the meat.
4. Add the chicken, green chilies, chili powder, salt, and garlic powder to the onions and mushrooms and stir well, then remove from heat.
5. Stir in about 3/4 cup sour cream and mix well.
6. Heat an ungreased pan over medium and cook the tortillas 30-45 seconds on each side.

I used Tortilla Land raw flour tortillas – easy to find in Albertson’s. It’s all right if they aren’t cooked through all the way.
It’s hard to ruin them – they taste good no matter what, even burned!
7. Scoop about 1/4-1/3 cup of sour cream and chicken mixture into the tortillas, roll them and lay them in a 13×9 inch pan that you’ve covered with 1/3 cup of sour cream.
Stuffed…
… and rolled!
Continue until all the tortillas are filled.
8. Cover the tortillas with the rest of the sour cream and copious amounts of cheese.
9. Bake at 350 degrees until the cheese is melted and bubbly (about 20 minutes).
Drooooooool!
10.  Warn your arteries about what’s to come, and DEVOUR!

OBESE Tuesday!

     Today marks Fat Tuesday, aka “Mardi Gras” aka “eat-everything-you-can-fit-into-your-body-until-you-burst”, aka “New-Years-Eve”. Personally, I like to call it “OBESE Tuesday”.

I make it count!

     Call it whatever you want – to me it means the last day of imbibing in rich foods that I am about to give up for Lent as a small sacrifice for Jesus and the suffering He endured, resulting in His death and following resurrection, in order to give me eternal life with God. 

Guys, this is serious. I’m giving up…
COFFEE!!!
Please note, I did not say caffeine. Green teas and black teas and “please-Lord-force-my-eyes-open-this-morning” teas are all open-season!
I’M ALSO GIVING UP DAIRY!!!
I know you’ve heard this before, but since Lent is a little more important to me than the superficial quality of my skin, this will last.
Remembrance of His suffering, PLUS clear skin.
Blessed on all counts.

     In order to really appreciate what I’m about to give up, I overdosed on all the above.

Of course that had to include Indian buffet…
Including a dairy-stuffed mango lassi!
     The day was spent shopping. If you know me, this is something I NEVER do! I went on a frikkin’ SPREE today! My last paycheck was incinerated by my credit card. I now have jeans that don’t have holes in the rear, and aren’t shredding at the pockets! I also got some incredible sunglasses – they’re ridiculously lame and adorable and reminiscent of six-year-old Becki (aka Becky-boo).
The “Dos Beckis” is reminiscent of current-day Becki, not six-year-old Becky-boo.
I also consumed my weight in Sour Cream Chicken Enchiladas – recipe coming tomorrow, in case you’ve give up dairy and want to cry whilst looking at beautiful, milky (ewww) pictures.
MY PLEA FOR HELP!
     Guess what! I have a question (or twenty) that I’m hoping you can help me with. I’m prepping to start my own website and need advice from all ends. 
1. I have no smarts when it comes to technology. Which web host should I choose? I’ve been recommended WebHostingHub and told that it’s great for people who are technologically challenged.
2. Once I get a host, I have no idea what to do. I don’t know HTML, XML or any of the in-between. All I really want as of now is a blog that’s not run under Blogger or WordPress. Any recommended templates I should check out? Or anyone willing to design one for credit?  
3. I don’t know what else to ask about this – that’s how little I know about the process.
PLEASE HELP ME!!!

Raw Vegan Experience!

     As you might recall, the last time I was in Carefree, we visited one of Ora’s clients-turned-friend, Sara. She runs a raw vegan academy, and now, a successful cafe.

Her inspirational messages and quotes are all over the restaurant.
Sara was still in the building process four weeks ago, and opened THREE weeks ago!
The classroom area is set up and in use for food preparation on busy nights.
Zen decor!
We started off with a combo platter. This had almond falafel with whipped avocado on top, lemony almond hummus, olive tapenade, dill and shitake mushroom pate, a green salad with dill, kale, parsley and tons of other greens I couldn’t identify…
and my favorite part of this dish: spicy seed crackers with sesame, pumpkin, flax and other things I can’t name. I honestly didn’t know half the ingredients that were in these! Sorry!
Ora chose the Rawgasmic sandwich. This had onion bread (made of smooshed nuts and onion) and was filled with greenery as far as the eye can see! This was layered with more whipped avocado and had a bunch of sprouts in for good measure.
I asked Sara to surprise me and choose my meal. She brought out raw vegan sushi with carrots, jicama, almond hummus, some kind of green lettuce, all wrapped in nori.
(Again, REALLY sorry I can’t be more specific – I’ve never had such trouble identifying ingredients! These were all disguised so well!)
This was the most crunchy thing I’ve ever consumed in my life. It came with a lovely ginger dip. I enjoyed the flavor, but my jaw ached a little after chomping on the roll.
She also brought out her “WOW tower” – this contains almonds, pumpkin seeds, sesame seeds, chia seeds, and tons of other seeds (argh, so sorry) that have been soaked to release the healthy enzymes, combined with carrots, (maybe) tomatoes, (maybe) spinach, all piled into a healthy tower.
The texture was interesting – if you’ve ever had chia seeds you know that they get kind of slimy, like flax seeds, but it wasn’t a BAD slimy. There was also a spicy bite to it, just a hint of chili flakes.
I ate a quarter of this and then was stuffed to the gills. 
This food is DENSE!
I WAS stuffed. WAS. Until I saw the dessert trays.
We ordered a tiramisu and a sweet potato pie to split three ways. If you’ve never had raw vegan food and are scared to try it, GO FOR THESE DESSERTS! The tiramisu was topped with a macadamia nut cream, and layered with Sara’s homemade dark chocolate and an almond and medjool date crust.
My only complaint was that I almost died eating this because I kept inhaling the powdered cocoa on top.
The sweet potato pie was like a pumpkin pie, but instead of pumpkin, it was mixed with rainbows and smiles. It contained sweet potato, parsnips, cardamom, cinnamon and cloves atop an almond and medjool date crust.
Overall, it was delicious, but I felt like I’d swallowed rocks by the end – SO DENSE!
Definitely something to try at least once in your life!

Mari’s Pasta Pomodoro!

     A few months back, Ora and I were invited to a fellow artist’s home for a homecooked meal. I fell head over heels for this pasta dish and begged Mari for her recipe. A few days ago, she sent it to me. Today, I made my dreams come true.

Not the bacon dream, the pasta dream. 
I dream about food a lot…
Mari’s Pasta Pomodoro
(lightly adapted)
2 tablespoons extra virgin olive oil
3 cloves garlic, minced
2 14.5oz cans of petite diced tomatoes (no spices or herbs added)
1 tablespoon kosher salt
2 tablespoons sugar
1 package fresh whole wheat linguini (I used Buitoni whole-wheat linguine)
     1. In a deep saute pan, heat the olive oil over medium heat and add minced garlic.
     2. Saute until garlic is a light brown, about two minutes.
     3. Add petite diced tomatoes, stir and simmer for 5-10 minutes, stirring constantly.
(Sorry for the painful product-placement!)
     4. Add salt and sugar, stir well and let simmer while pasta cooks.
     5. Cook pasta according to packaging (Buitoni’s fresh pasta only takes 2-3 minutes).
     6. Drain pasta and add to tomato sauce, then cook together until heated through, about 3 minutes.
     7. Serve and top with freshly grated asiago cheese and fresh herbs.
Mmmm, delectable AND healthy!
     At this point, I’d realized that I forgot to add a vegetable to my meal (yet again), so I roasted some broccoli and combined it with the pasta. 
HOLY LUSCIOUSNESS DELICIOUSITY!
So healthy! Maybe too healthy…
A big glass of Dos Beckis should remedy that!
After an extra month of bottle-conditioning, Dos Beckis has taken on a lovely hoppy flavor! 
I couldn’t be happier! 
And maybe some rich foods on the road – that’s right! 
Back to Carefree tomorrow morning!

Jinky’s Kanan Cafe!

     I had lots of errands to run today in order to prepare for a special video recipe coming up.

Dun dun dunnnnnn!
     My director and I swung by The Olive Vineyard around noon to pick up some special, super secret ingredients (what could I possibly be getting at an olive oil store? Who knows!) and I felt the rumblings of hunger in the pit of my stomach. After a glowing recommendation from the olive oil girl, we headed over to Jinky’s Kanan Cafe in Agoura Hills.
 This is a small chain with restaurants in Studio City, Sherman Oaks, Santa Monica and now Agoura Hills.
They’re known for their ridonkulous varieties of chili.
Ridonkulous = ridiculous squared.
So. Much. Chili.
We got a sampler of four cups of chili: Himalayan beef, Hickory Turkey…
…Spicy Mango Chicken and Wild, Wild West.
SPICY!!!
The overall favorite was the Wild, Wild West chili – the only one that had beans. All the others were just crumbly meats in sauces, and not substantial enough to satisfy.
I ordered the Sedona chicken sandwich – grilled chicken, green chilies, red onion and melted cheddar on a fluffy bun.
MUST. RETURN!
I got a preview of their breakfast menu.
I’ve been known to dream about bacon. I really hope I don’t start dreaming about their pancakes.
